This week’s Make it Healthy is a classic American dish we all know and love: Fried chicken, mashed potatoes and gravy, biscuit, and string beans. Got any ideas on how to make it healthy? This might sound a little strange to some of you, but it’s possible to use mashed cauliflower instead of the potatoes. Cauliflower can be steamed, then mashed much like potatoes – they taste very good and are just as easy to make. Plus you get an extra dose of veggies instead of extra starch.

    Potato is VERY healthy. Just mash it WITH THE SKIN and don’t add alot of cream. Use skim milk or fat free sour cream or something else creamy with no fat. Mashed potatoes are not unhealthy because of the potato but because of what we mix into them.

    I’ve breaded chicken with smashed Total corn flakes using egg white to stick them to the chicken. Spray lightly with an olive oil cooking spray and bake.

    The picture you have above includes what looks like a pretty good biscuit. I think in order to make it healthy, you have to drop the buscuit.

    An alternative I suppose is to make a buscuit with flaxseed or some similar replacement.
